In 2021, Hanky Panky entered the World’s 50 Best Bars list for the first time at number 12, the highest new entry of any bar that year. The bar celebrates Mexico’s traditions and ingredients by using local products, while also getting inspiration from around the world.
Their recently released Passport menu was influenced by the venues’ bartenders’ travels in 2021, when the team decided to overcome the challenges that the bar community faced and brought people together in a time of difficulties, embarking on a series of takeovers. First by opening the doors of their home in Mexico City to friends from the USA, India, South America, and Europe who were not able to work due to their own countries restrictions, and then by traveling overseas themselves.
The inspiration behind the Under the Volcano is to showcase Mexican culture and traditions. Featuring a mix of local and global flavors, the drink mixes savoury, herbal, bitter, and sweet notes to create something truly unique.
Under The Volcano
Ingredients:
- 15ml Matusalem 23 rum
- 15ml mezcal infused with epazote (traditional herb from Mexico)
- 30ml Antica formula
- 30ml Bitter fusetti
- 2 dashes essence of volcanic pine leaf from the Iztlaccíhuatl
- Garnish: A traditional candy called palanqueta made out of peanuts and melted piloncillo
Technique: Stirred
Add all ingredients to a cocktail mixing glass. Stir. Strain over one large cube in a rocks glass. Garnish with a palanqueta made out of peanuts and melted piloncillo.
