West Cork Bourbon Cask Whiskey is made from local Irish spring water and their own malted barley. They are the only distiller to use purely pot stills in their Whiskey distillation process. Aged entirely in Bourbon casks, this is a blended Irish whiskey containing 75% grain whiskey and 25% malt whiskey.
On the nose, the Whiskey offers a simple nose of dried fruit, grain, caramel, and light vanilla, followed by a distinct taste of fruit soaked in honey, brown sugar, Himalayan salt and toasted grain. Smooth, soft and easy, it should be enjoyed neat, on the rocks, or as a base for your favorite cocktail.

West Cork Distillers was created in 2003 by three childhood friends who longed for a change in career. One of the three, John O’Connell, was a classically-trained food scientist who turned his attention from food to Whiskey. Beginning in a back room of one of their houses with two old schnapps stills bought in Switzerland, the trio with the craftsmen who joined them, built their own equipment as they went along. They moved to a new distillery in 2014 and as of 2020, have plans to move to a 12 acre site in Skibbereen in 2020.
